Cantaloupe And Mint Soup Recipe - Cooking Index
4 lbs | 1816g / 64oz | Ripe cantaloupe - cut into chunks |
1/4 cup | 10g / 0.4oz | Fresh mint leaves - (packed) |
1/4 cup | 59ml | Fresh lemon juice |
2 tablespoons | 30ml | Granulated sugar - or to taste |
Combine cantaloupe, mint, lemon juice and sugar in a food processor or blender and process until smooth. Taste, and add more sugar or lemon juice if desired. Refrigerate until thoroughly chilled.
Stir well, and serve in chilled bowls.
This recipe yields 6 servings.
