Cantaloupe And Mint Soup

Recipe Ingredients

4 lbs 1816g / 64ozRipe cantaloupe - cut into chunks
1/4 cup 10g / 0.4ozFresh mint leaves - (packed)
1/4 cup 59mlFresh lemon juice
2 tablespoons 30mlGranulated sugar - or to taste

Recipe Instructions

Combine cantaloupe, mint, lemon juice and sugar in a food processor or blender and process until smooth. Taste, and add more sugar or lemon juice if desired. Refrigerate until thoroughly chilled.

Stir well, and serve in chilled bowls.

This recipe yields 6 servings.
