Quick Chicken Tortellini Soup Recipe - Cooking Index
Frozen chicken tortellini are a great convenience food.
Courses: Soup3 | Garlic cloves - chopped | |
2 tablespoons | 30ml | Olive oil |
8 cups | 1896ml | Chicken broth |
1 teaspoon | 5ml | Italian seasoning |
1 lb | 454g / 16oz | Chicken tortellini |
10 oz | 284g | Fresh spinach - thinly sliced |
(about 6 cups) | ||
1/4 cup | 36g / 1.3oz | Grated Parmesan cheese |
Freshly-ground black pepper - to taste |
In a large saucepan, cook garlic in olive oil over medium heat until fragrant, 1 to 2 minutes. Add chicken broth and Italian seasoning, bring to a boil over high heat. Add tortellini, reduce heat to medium and simmer, partially covered, until pasta is tender but still firm, about 10 minutes.
Add spinach and simmer until wilted, about 2 minutes. Stir in cheese and season with pepper to taste. Serve at once.
This recipe yields 4 servings.
