Hi-Way Restaurant Beef Barley Soup

Additional water may be needed to acquire desired consistency. If adding water, additional beef base should also be added.

Recipe Ingredients

2 cups 292g / 10ozDiced potatoes
3 cups 330g / 11ozDiced carrots
3 cups 330g / 11ozDiced celery
1/2 cup 31g / 1.1ozChopped onions
1/2 teaspoon 2.5mlPepper
1/4 cup 15g / 0.5ozBeef base
8 oz 227gTomato sauce
2 cups 125g / 4.4ozChopped beef roast
  Water - as needed
2 cups 474mlBarley - cooked, rinsed well

Recipe Instructions

Combine all ingredients except barley in kettle. Add water to cover. Boil until vegetables are tender, about 20 minutes. Add barley, cook 15 minutes.

This recipe yields 4 quarts; 8 to 12 servings.
