Hi-Way Restaurant Beef Barley Soup Recipe - Cooking Index
Additional water may be needed to acquire desired consistency. If adding water, additional beef base should also be added.
Courses: Soup2 cups | 292g / 10oz | Diced potatoes |
3 cups | 330g / 11oz | Diced carrots |
3 cups | 330g / 11oz | Diced celery |
1/2 cup | 31g / 1.1oz | Chopped onions |
1/2 teaspoon | 2.5ml | Pepper |
1/4 cup | 15g / 0.5oz | Beef base |
8 oz | 227g | Tomato sauce |
2 cups | 125g / 4.4oz | Chopped beef roast |
Water - as needed | ||
2 cups | 474ml | Barley - cooked, rinsed well |
Combine all ingredients except barley in kettle. Add water to cover. Boil until vegetables are tender, about 20 minutes. Add barley, cook 15 minutes.
This recipe yields 4 quarts; 8 to 12 servings.
