Gazpacho (Lower Calorie) Recipe - Cooking Index
I've recently started a diet and find that keeping a pitcher of this filling, relatively low-calorie gazpacho in my refrigerator helps me curb my appetite. It also opens up space in my refrigerator so I can keep on buying more fruit.
Courses: Soup1 cup | 237ml | Fresh pineapple chunks |
1 cup | 237ml | Papaya or mango chunks |
1 cup | 237ml | Peach chunks - (3 medium) |
1 cup | 237ml | Plum chunks - (3 medium) |
1 cup | 237ml | Unsweetened pineapple juice |
2 cups | 474ml | Tomato juice |
1 tablespoon | 15ml | Honey |
1/2 teaspoon | 2.5ml | Ground allspice |
1 teaspoon | 5ml | Minced gingerroot |
2 tablespoons | 30ml | Lemon or lime juice |
6 | Cilantro sprigs - minced | |
1/2 cup | 118ml | Dry sherry - (optional) |
Combine all ingredients in a food processor fitted with the metal blade or blender and process or puree until fairly smooth but still allowing some chunks to remain.
This recipe yields about 2 quarts for 8 one-cup servings.
Per (1-cup) serving without dry sherry: 75 calories; 1 gram protein; no fat; 19 grams carbohydrates; no cholesterol; 222 milligrams sodium; 2 grams total fiber; no calories from fat.
Per (1-cup) serving with dry sherry: 94 calories; 1 gram protein; no fat; 19 grams carbohydrates; no cholesterol; 223 milligrams sodium; 2 grams total fiber; no calories from fat.
