1 teaspoon | 5ml | Fresh thyme |
2 tablespoons | 30ml | Hot pepper sauce |
1 tablespoon | 15ml | Worcestershire sauce |

Freshly-ground black pepper - to taste | ||
8 oz | 227g | Sharp yellow cheese |
2 oz | 56g | Blue cheese |
* Note: Dark Bavarian bock or double bock works best in recipe.
Saute onions, celery, red bell pepper and bacon in olive oil. Drain off the oils and add stock, beer and cream. Bring just to a boil. Add thyme, hot pepper sauce, Worcestershire sauce, yellow cheese, blue cheese and salt and pepper to taste. If necessary, thicken with a mixture of 1 tablespoon firm butter combined with 1 tablespoon flour.
