Strawberries Into Salsa Into Avocadoes Recipe - Cooking Index
1 tablespoon | 15ml | Balsamic or raspberry vinegar - (to 2) |
1 tablespoon | 15ml | Olive oil - (to 2) |
1/2 teaspoon | 2.5ml | Honey |
1/2 teaspoon | 2.5ml | Minced garlic |
2 tablespoons | 30ml | Finely-minced red onion |
1 teaspoon | 5ml | Minced fresh jalapeño peppers |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1 | Strawberries - rinsed, hulled, | |
And sliced | ||
2 | Ripe Haas avocadoes | |
Boston or Bibb lettuce leaves - washed | ||
2 tablespoons | 30ml | Chopped roasted cashews or peanuts |
In a bowl whisk together vinegar, olive oil, honey, garlic, onion and jalapeño. Season to taste with salt and pepper and combine the strawberries and adjust seasoning again.
Peel, halve and pit the avocadoes. Spoon some strawberry salsa in avocado hollow and serve on lettuce; garnish with peanuts.
This recipe yields 2 servings.
