Cucumber Curls In Butter And Mint

Recipe Ingredients

4   Kirby cucumbers - (to 6) - peeled
  = (or a seedless cucumber)
2 tablespoons 30mlButter
  Salt - to taste
  Freshly-ground black pepper - to taste
1 tablespoon 15mlChopped mint - (to 2)

Recipe Instructions

Run a good vegetable peeler down the sides of the cucumber, lengthwise to create long thin strips; keep on turning the cucumber; you'll be left with an inner core which is basically seeds and which you should discard.

Heat the cucumber curls in the melted butter for 30 seconds to a minute. Remove from heat. Season with salt and pepper; dust with mint.

This recipe yields 2 servings.
