Berry Walnut Salad Recipe - Cooking Index
1/4 cup | 59ml | Mayonnaise, regular or low fat |
2 teaspoons | 10ml | Dijon mustard |
1/2 teaspoon | 2.5ml | Grated lemon rind |
2 tablespoons | 30ml | Lemon juice |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1/2 cup | 73g / 2.6oz | Walnuts - chopped |
1 cup | 237ml | Precooked wheat berries |
2 | Celery stalhs - finely diced | |
1 | Red bell pepper - finely diced (small) | |
1 | McIntosh apple - cored, diced fine | |
Bibb or Boston lettuce leaves |
In the bottom of a mixing bowl blend the mayonnaise, mustard, lemon rind and juice; season to taste with salt and pepper. Blend in the walnuts, wheat berries, celery, bell pepper, apple and adjust the seasoning. Serve over lettuce.
This recipe yields 2 servings.
