Sweet And Sour Squid Recipe - Cooking Index

| 1 cup | 62g / 2.2oz | Chopped onion | 
| 1/4 cup | 59ml | Olive oil | 
| 2 tablespoons | 30ml | Capers - drained and rinsed | 
| 1/4 cup | 59ml | Tomato paste | 
| 1/4 cup | 59ml | Cider vinegar | 
| 1 tablespoon | 15ml | Sugar | 
| 1/2 teaspoon | 2.5ml | Salt | 
| 1/8 teaspoon | 0.6ml | Freshly-ground black pepper | 
Clean squid and cut body into 1-inch strips and tentacles into 1-inch pieces.
Cook celery and onion in olive oil until soft and transparent. Add squid and cover and simmer for 5 minutes. Add capers, tomato paste, vinegar, sugar and salt and pepper and stir. Cover and simmer for approximately 20 minutes until squid is tender. Stir occasionally.
Serve over a bed of steamed white rice.
This recipe yields 3 to 4 servings.
