Shrimp Creole Recipe - Cooking Index
3 lbs | 1362g / 48oz | Medium shrimp - peeled and deveined |
4 tablespoons | 60ml | Butter or margarine |
1 tablespoon | 15ml | Vegetable oil |
6 tablespoons | 90ml | Flour |
1 | Tomato sauce - (16 oz) | |
1 cup | 62g / 2.2oz | Chopped onions |
1 cup | 110g / 3.9oz | Chopped celery |
1 cup | 146g / 5.1oz | Chopped bell pepper |
6 | Garlic cloves - chopped | |
1/2 cup | 118ml | Hot water |
Juice of 1 lemon | ||
1/2 teaspoon | 2.5ml | Sugar |
4 | Bay leaves | |
1/2 cup | 31g / 1.1oz | Chopped green onions |
Cayenne pepper - to taste | ||
Salt - to taste |
Melt butter in a heavy pot and add vegetable oil. Saute onions, celery, bell pepper, garlic, and green onions until soft (approximately 5 minutes). Add flour and blend well. Add bay leaf, lemon juice, tomato sauce, hot water and sugar and stir.
Cook over medium heat for approximately 30 minutes. Season to taste with salt and cayenne pepper. Add shrimp and cook for 30 minutes longer. Serve hot.
