Shrimp Ceviche Recipe - Cooking Index
1 lb | 454g / 16oz | Fresh rock shrimp |
2 | Roma tomatoes - diced | |
1 | Red onion - diced (medium) | |
3 | Jalapeño peppers - diced | |
1/4 cup | 4g / 0.1oz | Chopped fresh cilantro |
1/2 cup | 118ml | Fresh lime juice |
1/4 cup | 59ml | Salt - plus |
2 teaspoons | 10ml | Salt |
2 | Avocados - diced |
In one gallon of boiling water, add the 1/4 cup of salt. Add the rock shrimp and cook for 2 minutes. Drain and set aside to cool.
Combine remaining ingredients and chill for 2 hours. Serve with corn chips.
