Shrimp Ambrosia

Recipe Ingredients

1 1/2 lbs 681g / 24ozShrimp - cooked, peeled,
  And deveined
1 cup 110g / 3.9ozThinly-sliced celery
1 cup 237mlFresh orange slices or canned
  Mandarin orange slices
1/2 cup 118mlOlives - sliced
1/4 cup 15g / 0.5ozSliced green onions with green tops
1/2 cup 46g / 1.6ozShredded coconut
1 cup 237mlMayonnaise or plain yogurt
1 tablespoon 15mlLemon juice
4 teaspoons 20mlGrated orange peel

Recipe Instructions

In a large bowl, combine shrimp, celery, orange, olives, green onions and coconut.

In a separate bowl mix mayonnaise, lemon juice and orange peel to make salad dressing. Add to shrimp mixture and toss gently. Chill before serving.

This recipe yields 4 to 6 servings.
