Grilled Shrimp Kebabs

Cherry tomatoes or other vegetables can be substituted for the onions or peppers if desired.

Recipe Ingredients

2 lbs 908g / 32ozLarge shrimp - peeled and deveined
1   Green, red or yellow pepper - cleaned, seeded,
  And cut into 1 1/2" squares
2   Zucchini squash - cut 1 1/2" pieces
2   Onions - cut into chunks
1   Pineapple chunks
3 tablespoons 45mlVegetable or olive oil
3 tablespoons 45mlSoy sauce
1 tablespoon 15mlHoney
1/2 teaspoon 2.5mlGinger

Recipe Instructions

Alternate shrimp, onion, pepper, squash and pineapple on skewers. Mix pineapple juice, oil, soy sauce, honey and ginger together and brush onto kebabs. Grill over a moderate heat for approximately 10 minutes. Rotate kebabs once and use any remaining sauce to baste kebabs.

Serve with lemon wedges and wild rice.

This recipe yields 6 to 8 kebabs.
