Crab Cakes II

Recipe Ingredients

2 tablespoons 30mlButter
1/2   Yellow onion - cut 1/4" dice
1/2 cup 118mlHeavy whipping cream
2 lbs 908g / 32ozCrab meat (Dungeness, rock, snow, or lump)
1/2 cup 73g / 2.6ozBread crumbs
1 tablespoon 15mlColeman's dry mustard
1/4 teaspoon 1.3mlCayenne pepper
1 tablespoon 15mlSalt
2 tablespoons 30mlChopped fresh parsley
  Olive oil - as needed

Recipe Instructions

Saute onions in butter until clear, approximately 4 minutes. Mix the remaining ingredients together and add the sauteed onions. Form into 12 individual cakes.

Cook over medium-high heat in a small amount of olive oil for approximately 4 minutes per side, or until golden brown and hot in the center.
