Crab Cakes II Recipe - Cooking Index
2 tablespoons | 30ml | Butter |
1/2 | Yellow onion - cut 1/4" dice | |
1/2 cup | 118ml | Heavy whipping cream |
2 lbs | 908g / 32oz | Crab meat (Dungeness, rock, snow, or lump) |
1/2 cup | 73g / 2.6oz | Bread crumbs |
1 tablespoon | 15ml | Coleman's dry mustard |
1/4 teaspoon | 1.3ml | Cayenne pepper |
1 tablespoon | 15ml | Salt |
2 tablespoons | 30ml | Chopped fresh parsley |
Olive oil - as needed |
Saute onions in butter until clear, approximately 4 minutes. Mix the remaining ingredients together and add the sauteed onions. Form into 12 individual cakes.
Cook over medium-high heat in a small amount of olive oil for approximately 4 minutes per side, or until golden brown and hot in the center.
