Olive oil - as needed | ||
1 teaspoon | 5ml | Crushed red pepper - or to taste |
1 tablespoon | 15ml | Seafood seasoning |
2 oz | 56g | Sherry or good-quality cooking wine |
1/4 teaspoon | 1.3ml | Oregano |
2 tablespoons | 30ml | Chopped fresh parsley |
2 | Garlic cloves - mashed | |
1 teaspoon | 5ml | Freshly-ground white pepper - or to taste |
2 oz | 56g | Grated Parmesan cheese |
1/4 teaspoon | 1.3ml | Thyme |
Fill a large kettle with approximately 1/2 inch of water. Add clams which have been washed and drained. Lightly sprinkle olive oil over clams. Add all remaining ingredients to clams and mix by hand, turning clams gently.
Cover and cook over high heat until steam begins to escape from the kettle. Lower heat to medium-high and steam for 20 minutes.
Serve clams along with bowls of the seasoned clam broth for use as a dipping sauce.
This recipe yields 2 main course or 4 appetizer servings.
