Steamers A La Miller Place

Recipe Ingredients

4 lbs 1816g / 64ozSteamers
  Olive oil - as needed
1 teaspoon 5mlCrushed red pepper - or to taste
1 tablespoon 15mlSeafood seasoning
2 oz 56gSherry or good-quality cooking wine
1/4 teaspoon 1.3mlOregano
2 tablespoons 30mlChopped fresh parsley
2   Garlic cloves - mashed
1 teaspoon 5mlFreshly-ground white pepper - or to taste
2 oz 56gGrated Parmesan cheese
1/4 teaspoon 1.3mlThyme

Recipe Instructions

Fill a large kettle with approximately 1/2 inch of water. Add clams which have been washed and drained. Lightly sprinkle olive oil over clams. Add all remaining ingredients to clams and mix by hand, turning clams gently.

Cover and cook over high heat until steam begins to escape from the kettle. Lower heat to medium-high and steam for 20 minutes.

Serve clams along with bowls of the seasoned clam broth for use as a dipping sauce.

This recipe yields 2 main course or 4 appetizer servings.
