Salmon Stuffed Mushrooms Recipe - Cooking Index
1 lb | 454g / 16oz | Medium-sized mushrooms |
1/4 cup | 49g / 1.7oz | Butter or margarine - more if needed |
1/2 cup | 31g / 1.1oz | Minced onion |
1 | Salmon - (15 1/2 oz) - well drained | |
1/2 cup | 73g / 2.6oz | Dry breadcrumbs |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
1/4 teaspoon | 1.3ml | Paprika |
Wash mushrooms well, remove the stems and place the caps aside. Chop the stems and the onions. Melt 2 tablespoons of the butter in a frying pan over medium heat, add the chopped mushroom stems and onions and cook until tender stirring (about 10 minutes).
Remove the pan from the heat, stir in the flaked salmon, the bread, crumbs, pepper, and the paprika. Fill mushroom caps, with the salmon mixture and place in a large baking dish.
Melt the remaining butter and brush over the stuffed mushrooms. Sprinkle lightly with paprika. Bake at 450 degrees for 20 minutes and serve warm.
