Carambola Lobster Salad Recipe - Cooking Index

| 1/2 lb | 227g / 8oz | Mixed salad greens - chilled |
| 4 lbs | 1816g / 64oz | Carambola - sliced (medium) |
| 1 cup | 237ml | Oranges - peeled and sliced |
| 1 lb | 454g / 16oz | Cooked lobster tails or shrimp |
| 1 cup | 160g / 5.6oz | Black beans |
| Dressing | ||
| 1 cup | 237ml | Orange juice |
| 2 tablespoons | 30ml | Honey |
| 1/4 cup | 59ml | Canola oil |
| 1 teaspoon | 5ml | Salt |
Pour orange juice in a saute pan and bring to a boil; and reduce liquid by one half. Remove and cool.
Combine orange juice, honey, oil and salt for dressing. Combine salad ingredients, toss with dressing and serve.
This recipe yields 5 servings.
