Alaska Pollock Chowder Recipe - Cooking Index
1 1/2 lbs | 681g / 24oz | Pollock fillets - thawed if necessary |
1 cup | 62g / 2.2oz | Chopped onion |
1/2 cup | 55g / 1.9oz | Sliced celery |
1 | Garlic clove - minced | |
1 tablespoon | 15ml | Oil |
2 | Tomatoes - (14 1/2 to 16 oz ea) | |
3/4 cup | 177ml | Water |
1/4 cup | 59ml | Dry white wine or water |
1/2 teaspoon | 2.5ml | Oregano - crushed |
1/2 teaspoon | 2.5ml | Salt |
1/8 teaspoon | 0.6ml | Freshly-ground black pepper |
1 splash | Bottled hot pepper sauce |
Cut pollock into large chunks. Saute onion, celery and garlic in oil. Add tomatoes including liquid, water, wine and seasonings. Bring to boil; simmer 10 minutes.
Add pollock; simmer, covered, about 10 minutes or until fish flakes when tested with a fork.
