Tequila Herb Marinade Recipe - Cooking Index
The distinctive flavors of fresh rosemary and fresh basil tame the wild taste of tequila in this south-of-the-border approach to marinades. We call it "pescadero borracho", or drunken fish! Use it to souse shrimp, scallops or any fish but salmon.
Type: Fish1/3 cup | 78ml | Lemon juice |
1/3 cup | 78ml | Tequila |
1 tablespoon | 15ml | Olive oil |
2 tablespoons | 30ml | Fresh rosemary |
2 tablespoons | 30ml | Chopped basil |
1 teaspoon | 5ml | Minced garlic |
1/8 teaspoon | 0.6ml | Salt |
Freshly-ground black pepper - to taste |
Blend all ingredients.
This recipe yields about 1 cup.
