Mediterranean Marinade Recipe - Cooking Index
These ingredients capture the French flavors of the Cote d'Azur -- fresh basil, lemon, white wine and lots of garlic!
Type: Fish1/4 cup | 59ml | Olive oil |
1/4 cup | 59ml | Lemon juice |
1/4 cup | 59ml | White wine or water |
2 | Garlic cloves - (to 3) - minced | |
1 tablespoon | 15ml | Chopped fresh basil |
1/4 teaspoon | 1.3ml | Salt |
1/4 teaspoon | 1.3ml | Ground coriander |
Freshly-ground black pepper - to taste |
Blend all the ingredients. Pour marinade over any fish or brochette. Marinate up to 30 minutes, turning once. Drain marinade. Grill as desired.
