Alaska Snow Crab Crisps Recipe - Cooking Index
Blending snow crab with a minimum of seasonings -- just a bit of mayonnaise and sour cream, and a touch of mustard -- shows off its fresh, briny sweetness. These crisps heaped with snow crab, will disappear quickly at your next party.
Type: Fish, Shellfish| 8 slices | Italian peasant bread, 1/2" thick | |
| 2 cups | 125g / 4.4oz | Snow crab meat - (abt 4 oz) |
| 2 tablespoons | 30ml | Regular or low-fat mayonnaise |
| 2 teaspoons | 10ml | Sour cream |
| 1/2 teaspoon | 2.5ml | Dry mustard |
| 4 teaspoons | 20ml | Finely-chopped chives |
| Freshly-ground black pepper - to taste |
Grill the bread, or toast it in a 350 degree oven until the bread is golden brown.
Using a fork, in a bowl, combine the crab meat, mayonnaise, sour cream, mustard, and 2 teaspoons of the chives. Season to taste with pepper.
Spread each crisp with one-eighth of the crabmeat mixture. Sprinkle with the remaining chives, and serve.
