Pacific Rim Splash For Raw Oysters On The Half Shell

This is a tart and tangy twist on the mignonette traditionally served with raw oysters. Diced vegetables add a refreshing crunch.

Recipe Ingredients

1/2 cup 118mlRice wine vinegar
2 1/2 tablespoons 37mlHoney
1 tablespoon 15mlFinely-minced shallot or red onion
1 tablespoon 15mlSake wine
1/4 teaspoon 1.3mlCoarsely-ground black pepper
1/4 teaspoon 1.3mlDried red pepper flakes
1/4 teaspoon 1.3mlSalt
2 teaspoons 10mlChopped parsley
2 tablespoons 30mlFinely-minced English or regular cucumber
2 tablespoons 30mlFinely-minced celery
2 tablespoons 30mlFinely-minced red bell pepper
1 tablespoon 15mlVery thinly-sliced green onion
1 teaspoon 5mlBlack sesame seeds - (optional)

Recipe Instructions

Combine the vinegar, honey, shallot, sake, black pepper, red pepper flakes and salt in a small non-corrosive saucepan. Over high heat, bring the mixture just to a quick boil and then take the pan from the heat. Let cool to room temperature and refrigerate until well chilled. When the mixture is thoroughly chilled, add the remaining ingredients and refrigerate.

This recipe yields 1 generous cup.
