Pacific Rim Splash For Raw Oysters On The Half Shell Recipe - Cooking Index
This is a tart and tangy twist on the mignonette traditionally served with raw oysters. Diced vegetables add a refreshing crunch.
Type: Fish1/2 cup | 118ml | Rice wine vinegar |
2 1/2 tablespoons | 37ml | Honey |
1 tablespoon | 15ml | Finely-minced shallot or red onion |
1 tablespoon | 15ml | Sake wine |
1/4 teaspoon | 1.3ml | Coarsely-ground black pepper |
1/4 teaspoon | 1.3ml | Dried red pepper flakes |
1/4 teaspoon | 1.3ml | Salt |
2 teaspoons | 10ml | Chopped parsley |
2 tablespoons | 30ml | Finely-minced English or regular cucumber |
2 tablespoons | 30ml | Finely-minced celery |
2 tablespoons | 30ml | Finely-minced red bell pepper |
1 tablespoon | 15ml | Very thinly-sliced green onion |
1 teaspoon | 5ml | Black sesame seeds - (optional) |
Combine the vinegar, honey, shallot, sake, black pepper, red pepper flakes and salt in a small non-corrosive saucepan. Over high heat, bring the mixture just to a quick boil and then take the pan from the heat. Let cool to room temperature and refrigerate until well chilled. When the mixture is thoroughly chilled, add the remaining ingredients and refrigerate.
This recipe yields 1 generous cup.
