Gingered Fruit Salsa Recipe - Cooking Index
Crystallized ginger is ginger that has been cooked in a sugar syrup and dried; its slightly sweet, peppery flavor is a delicious complement to the fruits in this salsa. If you cannot find crystallized ginger, just use more of the fresh ginger.
Type: Fish1/4 cup | 59ml | Dry white wine |
1/4 cup | 23g / 0.8oz | Dried cranberries - (optional) |
2 tablespoons | 30ml | Seasoned rice vinegar |
Or white wine vinegar | ||
1 tablespoon | 15ml | Minced fresh ginger |
1 tablespoon | 15ml | Minced crystallized ginger |
1 | Papaya - peeled, seeded, | |
And diced | ||
1 | Pear - halved, cored, | |
And diced | ||
6 oz | 170g | Strawberries - stemmed and sliced |
In a medium bowl, stir together the wine, cranberries, vinegar and fresh and crystallized ginger. Let sit for 15 minutes, then add the papaya, pear and strawberries. Toss to mix well and serve.
This recipe yields 8 servings.
