Gingered Fruit Salsa

Crystallized ginger is ginger that has been cooked in a sugar syrup and dried; its slightly sweet, peppery flavor is a delicious complement to the fruits in this salsa. If you cannot find crystallized ginger, just use more of the fresh ginger.

Recipe Ingredients

1/4 cup 59mlDry white wine
1/4 cup 23g / 0.8ozDried cranberries - (optional)
2 tablespoons 30mlSeasoned rice vinegar
  Or white wine vinegar
1 tablespoon 15mlMinced fresh ginger
1 tablespoon 15mlMinced crystallized ginger
1   Papaya - peeled, seeded,
  And diced
1   Pear - halved, cored,
  And diced
6 oz 170gStrawberries - stemmed and sliced

Recipe Instructions

In a medium bowl, stir together the wine, cranberries, vinegar and fresh and crystallized ginger. Let sit for 15 minutes, then add the papaya, pear and strawberries. Toss to mix well and serve.

This recipe yields 8 servings.
