Creole Sauce Recipe - Cooking Index
This zesty sauce is a perfect accompaniment for the "Southern Style Clambake", but will also be delicious with your favorite grilled fish. Or, simmer some shrimp in the sauce and pour it over pasta or rice.

1 tablespoon | 15ml | Minced celery |
1 | Garlic clove - minced | |
2 teaspoons | 10ml | Vegetable oil |
1 tablespoon | 15ml | Flour |
1 | Diced tomatoes - (16 oz) | |
1/4 teaspoon | 1.3ml | Dried thyme |
1/8 teaspoon | 0.6ml | Cayenne pepper |
1 teaspoon | 5ml | Lemon juice |
1/4 teaspoon | 1.3ml | Hot pepper sauce - (to 1/2 tspn) |
In a medium skillet, saute the onion, celery and garlic in the oil until soft, about 3 minutes. Add the flour, and saute 1 minute longer. Add the tomatoes and their liquid, thyme and cayenne. Cook until slightly thickened about 5 minutes. Remove from heat and stir in lemon juice and pepper sauce. Cool to room temperature.
