Cilantro Cream Recipe - Cooking Index
Fresh cilantro lends a zesty tang to this creamy sauce. If cilantro is difficult to find, use any of your favorite herbs such as dill, tarragon, basil or parsley -- or stir in a bit of pesto -- its great! Make a day or two in advance, allowing the flavors to blend and mellow.
Type: Fish1 cup | 237ml | Regular or reduced-calorie sour cream |
1/2 cup | 118ml | Plain nonfat yogurt |
3/4 cup | 12g / 0.4oz | Minced cilantro |
3 | Green onions - minced | |
1 | Serrano chile - (to 2) - seeded and minced | |
1 tablespoon | 15ml | Orange juice |
1 teaspoon | 5ml | Finely-grated orange zest |
1/2 teaspoon | 2.5ml | Salt |
1 teaspoon | 5ml | Freshly-ground black pepper |
In a small bowl, stir together the sour cream, yogurt, cilantro, green onions, chiles, orange juice, orange zest, salt and pepper. Let the sauce stand one hour; taste and adjust seasonings. Serve alongside "Sauteed Shrimp And Artichkes."
