Carrot-Ginger Dressing Recipe - Cooking Index
1/2 lb | 227g / 8oz | Carrots - (3 medium) - chopped |
1/4 cup | 59ml | Water |
1/4 cup | 59ml | Seasoned rice vinegar |
3 tablespoons | 45ml | Minced peeled fresh ginger |
1 tablespoon | 15ml | Soy sauce |
1 tablespoon | 15ml | Asian sesame oil |
1 | Shallot - chopped | |
1 tablespoon | 15ml | Sherry |
1/2 cup | 118ml | Peanut or vegetable oil |
In a blender, combine the carrot, water, vinegar, ginger, soy sauce, sesame oil, shallot and sherry and puree. While the motor is running, drizzle in the oil until incorporated. Store in the refrigerator until ready to use.
This recipe yields about 2 cups.
