Tomato, Avocado, And Red Onion Salad With Herb Vinaigrette Recipe - Cooking Index
3 tablespoons | 45ml | Red wine vinegar |
1/4 cup | 59ml | Olive oil - plus |
1 1/2 teaspoons | 7.5ml | Olive oil |
1 tablespoon | 15ml | Minced fresh chives |
1 tablespoon | 15ml | Minced fresh flat-leaf parsley |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
2 | Ripe tomatoes - cut 1/4" thk slices (medium) | |
1 | Red onion - thinly sliced (small) | |
1 | Avocado - cut crosswise (large) | |
Into 1/3" thick slices |
Place vinegar in a small bowl. Gradually whisk in the oil in a thin stream. Stir in the chives, parsley, salt, and pepper.
Arrange the tomatoes, onion, and avocado in an overlapping pattern on serving plate. Pour dressing on top.
