| 1 1/4 lbs | 567g / 20oz | White American cheese - diced or shredded |
| 2/3 cup | 157ml | Milk |
| 1/2 cup | 31g / 1.1oz | Diced onion |
| 1/4 cup | 36g / 1.3oz | Diced Anaheim chiles |
| 1/4 cup | 36g / 1.3oz | Chopped canned sliced jalapeños |
| 1/4 cup | 15g / 0.5oz | Diced canned whole peeled tomatoes |
| 1 teaspoon | 5ml | Chopped fresh garlic |
| 3/4 teaspoon | 3.8ml | Ground cumin |
| 1/8 teaspoon | 0.6ml | Freshly-ground black pepper |

Heat the cheese and milk in double boiler until melted and smooth. Add the remaining ingredients and continue to cook, stirring occasionally, for 20 minutes.
Transfer the fondue to a lit and warm fondue pot or small chafing dish. Serve immediately with tortilla chips.
This recipe yields 4 to 6 servings.
