Basic Vinaigrette

1/4 cup 59mlWhite wine, Champagne, or
  Aged Sherry wine vinegar
2 teaspoons 10mlDijon mustard
1 teaspoon 5mlKosher salt
  Freshly-ground black pepper - to taste
2/3 cup 157mlExtra-virgin olive oil - (to 3/4)

Recipe Instructions

In a small mixing bowl, whisk together the vinegar, mustard, salt, and pepper. Gradually whisk in enough oil to make a smooth dressing with a balanced taste. Use immediately or store covered, in the refrigerator, for up to 1 week.

This recipe yields about 1 cup.
