Basic Vinaigrette Recipe - Cooking Index
1/4 cup | 59ml | White wine, Champagne, or |
Aged Sherry wine vinegar | ||
2 teaspoons | 10ml | Dijon mustard |
1 teaspoon | 5ml | Kosher salt |
Freshly-ground black pepper - to taste | ||
2/3 cup | 157ml | Extra-virgin olive oil - (to 3/4) |
In a small mixing bowl, whisk together the vinegar, mustard, salt, and pepper. Gradually whisk in enough oil to make a smooth dressing with a balanced taste. Use immediately or store covered, in the refrigerator, for up to 1 week.
This recipe yields about 1 cup.
