Cheddar Pecan Crisps Recipe - Cooking Index
1/2 cup | 99g / 3.5oz | Unsalted butter - (1 stick) - softened |
8 oz | 227g | Coarsely-grated cheddar cheese - (2 cups) |
1 oz | 28g | Egg yolk (large) |
1/2 teaspoon | 2.5ml | Salt |
1/2 teaspoon | 2.5ml | Cayenne |
2/3 cup | 41g / 1.4oz | All-purpose flour |
2/3 cup | 97g / 3.4oz | Pecans - finely chopped |
Preheat oven to 350 degrees.
Beat together butter and cheddar in a bowl with an electric mixer until smooth, then beat in remaining ingredients.
Roll rounded teaspoons of dough into balls and arrange 3 inches apart on buttered baking sheets. Flatten each ball into a 1 1/2-inch disk and bake in batches in middle of oven until golden, 15 to 18 minutes.
This recipe yields about 50 crackers.
