Blue Cheese, Port, And Walnut Spread Recipe - Cooking Index
1 lb | 454g / 16oz | Blue cheese - crumbled |
= (such as Stilton or Gorgonzola) | ||
1/2 cup | 99g / 3.5oz | Unsalted butter - (1 stick) - softened |
1/3 cup | 78ml | Tawny Port - (to 1/2) |
1 1/2 cups | 219g / 7.7oz | Chopped walnuts |
In a food processor, blend the cheese, butter, and Port until the mixture is smooth. In a bowl, combine the cheese mixture and the walnuts.
Transfer the spread to crocks or ramekins. The spread keeps, covered and chilled, for up to 3 weeks. Serve the spread with crackers.
This recipe yields 3 1/2 cups.
