Marinated Shrimp With Orange Recipe - Cooking Index
3 lbs | 1362g / 48oz | Large raw shrimp - peeled, deveined |
4 | Oranges - peeled, sectioned | |
2 | White onions - (to 3) - sliced (medium) | |
1 cup | 237ml | Cider vinegar - (to 1 1/2) |
1 cup | 237ml | Vegetable oil |
2/3 cup | 157ml | Fresh lemon juice |
1/2 cup | 118ml | Ketchup |
2 tablespoons | 30ml | Drained capers |
2 tablespoons | 30ml | Minced parsley |
2 teaspoons | 10ml | Salt |
2 teaspoons | 10ml | Mustard seed |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
2 | Garlic cloves - crushed |
Cook shrimp in boiling water only 2 minutes. Rinse with cold water until thoroughly chilled. Drain.
Combine shrimp, oranges, and onions in a large bowl. Mix remaining ingredients and pour over shrimp mixture. Cover and refrigerate 8 hours or overnight, stirring occasionally.
Drain and serve on a bed of lettuce or in individual shells.
This recipe yields 6 appetizer servings.
