Cream Cheese And Scallion Scrambled Eggs Recipe - Cooking Index
3 tablespoons | 45ml | Unsalted butter |
2/3 cup | 61g / 2.2oz | Minced scallions |
8 cups | 1584g / 55oz | Eggs (large) |
4 oz | 113g | Cream cheese - cut into bits, |
And softened | ||
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
Snipped chives - for garnish | ||
= (or thinly sliced scallions tops) |
In a medium non-stick skillet cook the scallions in the butter over moderate heat, stirring occasionally, until soft.
In a bowl whisk together the eggs, cream cheese and salt and pepper. Pour the mixture into the skillet and cook over moderately-low heat, stirring, until cooked. Transfer to a serving plate and sprinkle with the chives or scallions.
This recipe yields 4 servings.
