Cream Cheese And Scallion Scrambled Eggs

Recipe Ingredients

3 tablespoons 45mlUnsalted butter
2/3 cup 61g / 2.2ozMinced scallions
8 cups 1584g / 55ozEggs (large)
4 oz 113gCream cheese - cut into bits,
  And softened
  Salt - to taste
  Freshly-ground black pepper - to taste
  Snipped chives - for garnish
  = (or thinly sliced scallions tops)

Recipe Instructions

In a medium non-stick skillet cook the scallions in the butter over moderate heat, stirring occasionally, until soft.

In a bowl whisk together the eggs, cream cheese and salt and pepper. Pour the mixture into the skillet and cook over moderately-low heat, stirring, until cooked. Transfer to a serving plate and sprinkle with the chives or scallions.

This recipe yields 4 servings.
