2 cups | 474ml | Couscous |
3/4 cup | 109g / 3.8oz | Roasted unsalted pistachios - coarsely chopped |
1/2 cup | 46g / 1.6oz | Minced scallions, white part and 1" green - (abt 1 bunch) |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Cook couscous according to package directions. Add pistachios and scallions, fluffing with a fork to combine. Season with salt and pepper.
