Roomful Of Mushrooms

Recipe Ingredients

1 tablespoon 15mlCooking oil
1/2 cup 31g / 1.1ozDiced onion
1 teaspoon 5mlFinely-chopped garlic
1 teaspoon 5mlFinely-chopped ginger
1 teaspoon 5mlSerrano or jalapeño chili pepper - seeded, and (small)
  Thinly sliced
2 oz 56gSnow peas - ends, strings remove
1 oz 28gRed bell pepper - seeded, and (small)
  Cut into 1" squares
1 lb 454g / 16ozAssorted mushrooms - (e.G. Cremini,
  Portobello, oyster or straw) - stems trimmed,
  (if using shiitake or oysters, remove
  Stems), cut in slices or bite-size pieces
2 tablespoons 30mlOyster-flavored sauce
2 tablespoons 30mlSweet rice wine

Recipe Instructions

In a large skillet or wok, heat oil over medium heat until hot. Add onion, cook and stir until tender, about 3 minutes. Add garlic, ginger, chili pepper, snow peas, bell pepper and mushrooms (except oyster mushrooms if using). Cook and stir until moisture evaporates, 5 to 7 minutes.

Add oyster mushrooms (if using). Cook until barely softened, about 2 minutes. Stir in oyster-flavored sauce and wine.

This recipe yields about 4 servings.
