| 1 | Seedless cucumber - sliced thin | |
| 1 | Red onion - thinly sliced | |
| Vinaigrette | ||
| 1/4 cup | 59ml | Red-wine vinegar |
| 2 teaspoons | 10ml | Dijon mustard |
| 1 | Garlic clove - minced | |
| Salt - to taste | ||
| Freshly-ground black pepper - to taste | ||
| 3/4 cup | 177ml | Extra-virgin olive oil |
Tear lettuce into bite-size pieces. In a large bowl toss lettuce with remaining ingredients. Toss salad with vinaigrette.
Vinaigrette: In a small bowl whisk together vinegar, mustard, garlic, salt and pepper. In a slow stream add olive oil, whisking constantly.
This recipe yields 8 servings.
