Boston Brown Bread Recipe - Cooking Index
2 cups | 125g / 4.4oz | Whole-wheat flour |
1 cup | 62g / 2.2oz | All-purpose flour |
2 teaspoons | 10ml | Baking soda |
1 teaspoon | 5ml | Salt |
2/3 cup | 106g / 3.7oz | Brown sugar - (firmly packed) |
1/4 cup | 59ml | Unsulfured molasses |
2 cups | 474ml | Buttermilk |
1 cup | 160g / 5.6oz | Raisins |
3/4 cup | 109g / 3.8oz | Coarsely-chopped walnuts |
Preheat oven to 350 degrees and grease and flour a loaf pan, 9 1/4 by 5 1/4 by 2 3/4 inches, knocking out excess flour.
In a large bowl whisk together dry ingredients. Stir in remaining ingredients until just combined. Pour batter into prepared pan and bake in middle of oven until a tester comes out clean, about 1 hour.
Cool bread in pan on a rack for 5 minutes. Turn loaf out onto rack and cool completely before slicing.
This recipe yields 1 loaf.
