Okra And Tomatoes Recipe - Cooking Index
1/2 cup | 31g / 1.1oz | Finely-chopped sweet white onion |
2 tablespoons | 30ml | Olive oil or bacon grease |
2 cups | 292g / 10oz | Chopped fresh okra |
3 cups | 187g / 6.6oz | Fresh tomatoes - peeled, chopped (medium) |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Saute the onion in the oil over medium heat until softened. Add the okra and the tomatoes with all their juice. Cover and simmer over low heat for 15 minutes. Add salt to taste, and simmer, covered, for 5 minutes more. Top with a dash of pepper just before serving.
