Sweet Pepper Pickles Recipe - Cooking Index
2 | Chopped green peppers | |

1 | Red onion - chopped (large) | |
3 cups | 711ml | Vinegar |
1 cup | 237ml | Water |
1 cup | 198g / 7oz | Sugar |
5 | Garlic cloves - one per pint | |
1/2 teaspoon | 2.5ml | Dill per pint |
1/2 teaspoon | 2.5ml | Mustard seeds per pint |
1/2 teaspoon | 2.5ml | Celery seeds per pint |
In a large pot, combine peppers, onion, vinegar, water and sugar. Simmer for 15 minutes.
To each jar, add 1 clove garlic and each of the seasonings. Pack pepper mixture into hot jars leaving 1/4-inch headspace. Adjust 2-piece caps. Process 10 minutes in boiling water canner.
This recipe yields 5 pints.
