Sweet Pepper Pickles


Recipe Ingredients

2   Chopped green peppers
2   Chopped yellow peppers
2   Chopped orange peppers
2   Chopped red peppers
1   Red onion - chopped (large)
3 cups 711mlVinegar
1 cup 237mlWater
1 cup 198g / 7ozSugar
5   Garlic cloves - one per pint
1/2 teaspoon 2.5mlDill per pint
1/2 teaspoon 2.5mlMustard seeds per pint
1/2 teaspoon 2.5mlCelery seeds per pint

Recipe Instructions

In a large pot, combine peppers, onion, vinegar, water and sugar. Simmer for 15 minutes.

To each jar, add 1 clove garlic and each of the seasonings. Pack pepper mixture into hot jars leaving 1/4-inch headspace. Adjust 2-piece caps. Process 10 minutes in boiling water canner.

This recipe yields 5 pints.
