Potato Dumplings

Recipe Ingredients

6   Potatoes - boiled in their skin (medium)
2   Eggs - lightly beaten
2/3 cup 41g / 1.4ozSifted flour
2 teaspoons 10mlSalt
1/4 teaspoon 1.3mlFreshly-ground white pepper
1/2 teaspoon 2.5mlNutmeg - (optional)

Recipe Instructions

When cool enough to handle, peel and mash or rice the potatoes. Beat in all the remaining ingredients. Shape into 1- or 2-inch balls. Drop into just boiling, salted water and cook for 7 to 10 minutes. Drain. Serve with "Bavarian Sauerbraten" (see recipe).

This recipe yields 8 servings.
