Pork Sate With Peanut Dippping Sauce

Recipe Ingredients

1 tablespoon 15mlMinced fresh lemongrass - (from bottom 6"
  Of stalk)
3 tablespoons 45mlFresh lime juice
2 tablespoons 30mlDark brown sugar
1 tablespoon 15mlSoy sauce
1   Garlic clove - minced
1 tablespoon 15mlGrated ginger
3/4 lb 340g / 11ozPork tenderloin - trimmed, and
  Cut 3" long, 1/2" wide, 1/4" thick slices
12   Eight-inch bamboo skewers - soaked in water
  For 30 minutes
  Peanut Dipping Sauce
1/3 cup 65g / 2.3ozSmooth peanut butter
1   Garlic clove
2 tablespoons 30mlFresh lime juice
2 tablespoons 30mlSoy sauce
1 teaspoon 5mlSugar
1/8 teaspoon 0.6mlCayenne - or to taste
1/3 cup 78mlWater
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Mix lemongrass, lime juice, sugar, soy sauce and garlic in large bowl. Add pork; toss to coat with marinade. Let stand 30 minutes to 1 hour.

Preheat broiler. Thread 3 pork strips on each skewer. Grill until cooked through, about 3 minutes per side. Pour sauce into bowl; set in center of platter. Sprinkle with green onion. Surround with pork skewers and serve.

Peanut Dipping Sauce: In a blender blend together the peanut butter, the garlic, the lime juice, the soy sauce, the sugar, ginger, the cayenne, the water, and salt and pepper to taste until the mixture is smooth and transfer the sauce to a bowl. The sauce may be made 2 days in advance and kept covered and chilled. (Makes 1 cup)
