Peach-Mango Fruit Salad Recipe - Cooking Index
3 cups | 187g / 6.6oz | Chopped tomatoes |
1 cup | 62g / 2.2oz | Chopped red onion |
1 cup | 146g / 5.1oz | Chopped yellow pepper |
1/3 cup | 48g / 1.7oz | Chopped seeded jalapeño |
1 tablespoon | 15ml | Chopped garlic |
1 1/2 cups | 219g / 7.7oz | Chopped peeled peaches |
1 cup | 146g / 5.1oz | Chopped mango |
1 tablespoon | 15ml | Lime juice |
1 teaspoon | 5ml | Chopped fresh cilantro |
In a large pot over medium heat combine the vegetables. Cook for 10 minutes. Add peaches and mango and cook for additional 5 minutes. Remove from heat, add lime juice and cilantro. Stir.
Pack into hot jars leaving 1/4-inch headspace. Adjust 2-piece caps. Process 10 minutes in boiling water canner.
This recipe yields about 5 half pints.
