Haricots Verts With Shallot Dressing

Recipe Ingredients

1 lb 454g / 16ozHaricots verts (thin French beans) - trimmed
3 tablespoons 45mlExtra-virgin olive oil
2 teaspoons 10mlDijon mustard
2 teaspoons 10mlWhite-wine vinegar
1   Shallot - minced
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Steam beans until just tender, 3 to 8 minutes. While beans are steaming, whisk together remaining ingredients and salt and pepper to taste.

Toss beans with dressing and season with salt and pepper.

This recipe yields 4 servings
