Sweet Melissa's Hot Fudge

Recipe Ingredients

15 oz 426gBittersweet chocolate - coarsely chopped
1/2 cup 99g / 3.5ozGranulated sugar
1 cup 328g / 11ozLight corn syrup - plus
1 teaspoon 5mlLight corn syrup
1 cup 237mlWater - plus
2 teaspoons 10mlWater
1 1/2 cups 165g / 5.8ozUnsweetened cocoa powder
1 1/2 tablespoons 22mlInstant coffee or instant espresso
6 tablespoons 90mlCognac or brandy

Recipe Instructions

Using a double boiler, melt chocolate and keep warm. In large saucepan, combine sugar, corn syrup, water, cocoa powder, and instant coffee. Bring to a boil, whisking constantly. When the mixture comes to a rolling boil, cook 1 or 2 more minutes. Remove from heat and whisk in melted chocolate and stir in cognac. Serve warm. Can be refrigerated up to 2 weeks.
