Sesame Chicken With Napa Cabbage And Spinach Slaw On Baguette Recipe - Cooking Index
2 | Chicken breasts - precooked | |
2 tablespoons | 30ml | Sesame seeds |
2 teaspoons | 10ml | Sesame oil |
1 tablespoon | 15ml | Freshly-squeezed lemon juice |
1/2 | Napa cabbage - shredded | |
2 cups | 80g / 2.8oz | Shredded cleaned, trimmed spinach leaves |
1 | Carrot - shredded | |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1 | Baguette - (abt 20" long) |
Cut the chicken breasts into strips. In a medium bowl, toss together chicken strips, 2 tablespoons sesame seeds, 1 tablespoon freshly squeezed lemon juice, and1 teaspoon sesame oil.
In a separate medium bowl, toss together with Napa cabbage shredded, 2 cups spinach leaves, shredded, and 1 carrot, shredded. Add 1 teaspoon sesame oil and salt to taste.
Slice a baguette 3/4 of the way through. Stuff the chicken and slaw into the baguette. Cut into 3 or 4 sandwiches.
This recipe yields 3 to 4 sandwiches.
