1 cup | 62g / 2.2oz | Yellow cornmeal |
2 teaspoons | 10ml | Baking powder |
1/2 teaspoon | 2.5ml | Salt |
1 teaspoon | 5ml | Cajun spice |
1/2 teaspoon | 2.5ml | Cayenne pepper - (optional) |
1 cup | 62g / 2.2oz | Finely-chopped onions |
1/4 cup | 15g / 0.5oz | Cut corn |
2 cups | 396g / 13oz | Eggs (large) |
1/4 cup | 59ml | Buttermilk |
8 oz | 227g | Canola oil |
Mix the dry ingredients, chopped onions and cut corn. Combine the eggs and buttermilk. Add buttermilk mixture to dry ingredients. Stir well. Use a tablespoon or your hands to form patties.
To enhance flavor, deep fry patties in the same oil that was used to fry fish or use 8 ounces of vegetable oil heated in an iron skillet to 350 degrees.
