Good Old American Corn Pudding Recipe - Cooking Index
1 tablespoon | 15ml | Butter |
1 tablespoon | 15ml | Onion - diced small (medium) |
1 teaspoon | 5ml | Minced garlic |
6 | Corn ears --stripped of kernels | |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1 | Corn Stock - (see below) | |
1 | Heavy cream | |
10 oz | 284g | Yellow corn meal |
1/2 cup | 118ml | Chives |
Corn Stock | ||
6 | Corn stalks | |
1 | Onion - diced medium (medium) | |
2 | Carrots | |
2 | Bay leaves | |
1 tablespoon | 15ml | Peppercorn |
2 tablespoons | 30ml | Salt |
2 | Water |
Corn Stock: Place all ingredients in a stock pot, cover with cold water. Simmer for 40 minutes and strain.
Pudding: Melt butter in a large sauce pan, over low heat, and cook the onions and garlic for 3 minutes. Add the corn kernels, cook 1 minute. Season with salt and pepper. Add stock and cream bring to a boil. Slowly whisk in cornmeal and cook for 3 minutes. Add chives, stir, and serve.
