Good Old American Corn Pudding

Recipe Ingredients

1 tablespoon 15mlButter
1 tablespoon 15mlOnion - diced small (medium)
1 teaspoon 5mlMinced garlic
6   Corn ears --stripped of kernels
  Salt - to taste
  Freshly-ground black pepper - to taste
1   Corn Stock - (see below)
1   Heavy cream
10 oz 284gYellow corn meal
1/2 cup 118mlChives
  Corn Stock
6   Corn stalks
1   Onion - diced medium (medium)
2   Carrots
2   Bay leaves
1 tablespoon 15mlPeppercorn
2 tablespoons 30mlSalt
2   Water

Recipe Instructions

Corn Stock: Place all ingredients in a stock pot, cover with cold water. Simmer for 40 minutes and strain.

Pudding: Melt butter in a large sauce pan, over low heat, and cook the onions and garlic for 3 minutes. Add the corn kernels, cook 1 minute. Season with salt and pepper. Add stock and cream bring to a boil. Slowly whisk in cornmeal and cook for 3 minutes. Add chives, stir, and serve.
