Club Sandwich Wraps

Recipe Ingredients

4   Uncooked bacon slices - diced
1/2 cup 73g / 2.6ozChopped avocado
1/2 cup 31g / 1.1ozChopped tomato - seeds discarded
1/3 cup 20g / 0.7ozFinely-chopped red onion
2 tablespoons 30mlChopped fresh basil
1 teaspoon 5mlFresh lime juice
  Kosher salt - to taste
  Freshly-ground black pepper - to taste
1/4 lb 113g / 4ozThinly-sliced smoked turkey
1 cup 146g / 5.1ozChopped arugula - (firmly packed)
2   Flour tortillas - (10" to 11" dia)

Recipe Instructions

Heat a large non-stick skillet over medium heat. Add bacon and cook until crispy and brown, about 5 minutes, stirring occasionally. Using a slotted spoon, transfer the bacon to a paper towel-lined plate.

Combine the avocado, tomato, onion, basil, lime juice, and bacon in a small bowl. Season with kosher salt and pepper to taste. Divide the avocado mixture evenly among the tortillas, leaving at a 1-inch border around the edge. Divide the turkey and arugula among the tortillas, and wrap.

This recipe yields 2 wraps.
