Christophine Vinaigrette

Recipe Ingredients

2 cups 474mlChayotes (medium)
2 tablespoons 30mlGarlic vinegar
1 tablespoon 15mlDijon mustard
1/4 cup 59mlOlive oil
1/4 teaspoon 1.3mlScotch Bonnet type chile
1/2 teaspoon 2.5mlFresh chives
1   Bibb or Boston lettuce head - separated into leaves
  Red bell pepper - for garnish

Recipe Instructions

Peel the chayotes and grate them into a bowl. Prepare vinaigrette from the remaining ingredients except the lettuce and pepper, and pour it over the grated chayotes. Mix well and allow to sit for 15 minutes.

Serve on a bed of lettuce garnished with curlicues of red bell pepper.
