Tomato Bread Salad With Herbs

Recipe Ingredients

1 tablespoon 15mlRed-wine vinegar
1   Garlic clove - mashed to paste with
1   Salt
  Freshly-ground black pepper - to taste
1/4 cup 59mlExtra-virgin olive oil
2 cups 474mlCrusty bread cubes, 3/4"
1/2 lb 227g / 8ozVine-ripened red tomatoes - cut 3/4" wedges
1/2 lb 227g / 8ozVine-ripened yellow tomatoes - cut 3/4" wedges
1/4 cup 59mlNiçoise or Kalamata olives
1/4 cup 10g / 0.4ozFresh basil leaves - washed well,
  Spun dry, and chopped fine
1 tablespoon 15mlFinely-chopped fresh marjoram leaves
  Salt - to taste

Recipe Instructions

In a bowl whisk together vinegar, garlic paste, and pepper to taste and whisk in oil until emulsified. Add remaining ingredients and salt to taste and toss to combine well.

Let salad stand at room temperature 15 minutes to allow bread to soak up some dressing.

This recipe yields 2 servings.
